How to make Ox tail stew - So Kkori Jjim

Ingredients

  • 1kg oxtail

  • 4 tbsp soy sauce

  • 2 tbsp sugar

  • 1 tbsp sesame oil

  • 1 tbsp minced garlic

  • 1 tsp minced ginger

  • 2 spring onions

  • 1 onion

  • ¼ turnip

  • 1.5L water

  • Black pepper & sesame seeds to finish

Method

  1. Soak the oxtail in cold water for 1–2 hours to draw out the blood.

  2. Blanch in boiling water for 10 minutes, then rinse clean.

  3. Add oxtail, spring onions, onion, turnip and water to a pot. Simmer for 1 hour 30 minutes.

  4. Mix together soy sauce, sugar, garlic, ginger and sesame oil to make the sauce.

  5. Remove the oxtail from the broth and coat well in the sauce.

  6. Return to the pot and simmer on low heat for a further 30 minutes until glossy and tender.

  7. Finish with sesame seeds and black pepper.

  8. Enjoy your stew with rice or bread!
